Sweet Potato Custard


Sweet Potato Custard

What you need:
1 cup cooked sweet potatoes, mashed
1/2 cup mashed banana
1 cup evaporated skim milk
2 tbsp packed brown sugar
2 egg yolks, beaten
1/2 tsp salt
1 tbsp white sugar
1 tsp ground cinnamon


Equipment and Supplies:
oven (you'll need help from an adult assistant)
medium-sized bowl
rubber spatula
2 ramekins
measuring cups and spoons

What to do:
Preheat the oven to 150ºC.
In a bowl, stir together sweet potato and banana.
Add milk, blending well with a rubber spatula.
Add brown sugar, egg yolks, and salt, mixing thoroughly.

Distribute mixture to the ramekins.
Combine white sugar and cinnamon; sprinkle over top of sweet potato mixture.
Bake in the preheated oven for 30~45 minutes, or until knife inserted near the center comes out clean.
Remove from oven (with help from your adult assistant) and allow to cool down. 
Serve and Enjoy!
